Roasted Capsicum Pizza

Serves 2, Cook 15 Min

  • 1 red capsicum, thinly sliced
  • 1⁄2 red onion, thinly sliced
  • 2 x 65g wholemeal pita pockets
  • 15g pine nuts
  • 180g cottage cheese 
  • 20g rocket leaves
  • Salt & pepper, to taste

Preheat oven to 180°C and line a large baking tray with baking paper.

Place capsicum and onion on tray, season with salt and pepper and roast for 10 minutes.

Add pita bread and pine nuts to the same tray and bake for a further 5 minutes until pita is crisp and vegetables are tender.

Place pita bread on serving plates and spread with cottage cheese. Add capsicum and onions, scatter over pine nuts and top with rocket to serve.
