Carrot Cake Snack Balls

- 1 cup (160g) pitted dates
- 1⁄2 cup (120g) grated carrot
- 1⁄3 cup (60g) almond meal
- 1 tbs maple syrup
- 1⁄2 tsp ground cinnamon
- 1⁄4 tsp mixed spice
- 1⁄3 cup (30g) desiccated coconut
Place dates, carrot, almond meal, maple syrup and spices in a food processor and blend until fine and the mixture comes together.
Roll mixture into 12 even-sized balls and roll in coconut.
Store refrigerated in an airtight container for up to 5 days or freeze for up to 3 months.
