White Chocolate Energy Balls
Ingredients
- 1/2 cup rolled oats
- 60 grams white chocolate, chopped
- 3/4 cup desiccated coconut, plus extra for coating
- 1 cup of cashews, soaked in water overnight and then drained
- 2 tablespoons of coconut oil, melted
- 2 tablespoons of maple syrup
Method

Put the oats, chocolate, cashews, coconut, coconut oil and maple syrup in a food processor and blend until smooth and combined.

Roll the mixture into 12 balls and then roll in coconut to coat.
