White Chocolate Energy Balls

  • 1/2 cup rolled oats 
  • 60 grams white chocolate, chopped
  • 3/4 cup desiccated coconut, plus extra for coating
  • 1 cup of cashews, soaked in water overnight and then drained
  • 2 tablespoons of coconut oil, melted
  • 2 tablespoons of maple syrup


  1. Put the oats, chocolate, cashews, coconut, coconut oil and maple syrup in a food processor and blend until smooth and combined.

  2. Roll the mixture into 12 balls and then roll in coconut to coat.

Can be stored in the fridge in a container for up to 7 days or freeze for up to 2 months. Have 1 ball as a healthy mid or afternoon snack. Also a great option to put in kid's lunchboxes.
