Slow Cooker Beef Stew
Prep 5 Min, Cook 6 to 12 hours, Serves 4
Ingredients
- 750g beef chuck steak, diced into 3cm cubes
- 2 x 400g tins chopped tomato
- 2 brown onions, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, finely chopped
- 1 bay leaf
- 800g sweet potato, 2cm diced
- 2 tbs chopped fresh parsley
- Salt & pepper, to taste
Method

Put the steak, onions, carrots, celery, garlic and bay leaf in the slow cooker and season with salt and pepper.

Stir through the tomatoes and ensure the steak and vegetables are covered with sauce.

Turn the slow cooker onto low and cook covered for 6-7 hours or overnight.

10 minutes before serving, steam or boil the sweet potato until tender and then mash it with a tablespoon of butter and season with salt and pepper.

To serve, divide the meat and mash between four plates and scatter over fresh parsley.
