BBQ Chicken & Chickpea Salad
Ingredients
- 500 grams of shop bought BBQ chicken (or shredded cooked chicken breast) ·
- 400 grams or rocket or mixed lettuce leaves
- 200 grams of cucumber, chopped
- 1 red capsicum chopped into thin strips
- 1 punnet of cherry tomatoes halved
- 1 x 400 gram can of chickpeas drained
- 30 grams of pitted or sliced black olives
- ½ cup of continental parsley leaves chopped
- 1 tablespoon of olive oil
- 99% fat free salad dressing or fat free mayonnaise
Method
Combine ingredients and dress with 1 tablespoon of olive oil and fat free salad dressing or fat free mayonnaise to taste.
